What would be the best camera for an Interior Design student?

I'm an interior design student and my classes are starting to demand that I have a camera.My assignments entail that I take pictures of building and their interiors at day and nighttime. On occasions I have to take pictures while I'm driving by buildings (so I'm guessing the camera needs to have image stabilization). Truth is I know nothing about cameras and need help deciding which one to buy. Since I'm only going to be using it for school, I think it doesn't (and can't) be to expensive.
So I need a camera that:
-Takes nice pictures at any time of the day/night.
-Has vibration reduction for image stability
-Is capable to take both great interior and exterior pictures.
-Does not go over $300
-I'd like to stick with either Canon or Nikon
